Below is all you need to get started and to start smoking real tasty food straight away. WHAT AND WHY? To Smoke your food correctly the method involves infusing a Smokey flavour whilst cooking,. It adds an appetising delicious aroma and flavour to your food that you can’t get from any other cooking method, and there is a wide range of flavours depending on the type of food you’re cooking,. and the flavour you require. TOOLS YOU WILL NEED To smoke on a gas barbecue is done by combusting flavoured wood inside your grill through a wood chip smoke box they are on our site under grill accessories and other than that you can use tin foil but its not quite as efficient but works. Using a wood chip smoke box doesn’t only mean your chips are kept tightly in place, but the airflow is maximised, making for an optimum burn and smoke distribution throughout your grill. There are a wide choice of wood chips available There are so many flavours available from Whisky flavoured to Apple and from Brandy to Cherry the choice is vast. However they all produce a mild smoky taste with a sweet finish that work best with beef, fish, pork, poultry, fruit, vegetables The whisky flavour in smoke chips creates an unrivalled taste that will definitely leave your guests wanting more! HOW TO GET STARTED Pre-heat the Barbie Pre-heat the barbecue to at least 250-260 degrees before adding the smoker box or chips this could take 15-20 mins We highly recommend soaking the chips in water at least 30 minutes before use to avoid them lighting on fire and producing more fire than smoke. The time you need to soak your chips will differ depending on the recipe you are using, so double check this first. Pack the smoker box with your chosen wood chips. and use tongs to pick up the chips and allow the excess water to drain off. Hot smoking Hot smoking will be done at temperatures between 95° and 190°C. This technique works best with food that needs smoking for a longer period of time. Such as portions of meat like joints of beef or whole chickens they will all need to be hot smoked to make sure the meat is thoroughly cooked. As a rule of thumb, we recommend hot smoking anything that will need to be cooked for a bare minimum of 20-minutes. Cold smoking Cold smoking is perfect for more delicate foods such as fish, cheese and anything that could melt easily. Aim for a temperature between 100° and 120°C. please read up on cold smoking first and use the guide to find the correct temperature to cook your food as this does vary so you ensure there is no bacteria left in your cooked food. Tip of the day!!! ..........Get a meat thermometer Meat thermometers are great for checking your meat is fully cooked through.the last thing you want when everything is ready to serve is to have raw meat! Investing in a wireless meat thermometer! is a great way to ensure your cooked food is perfect every time and they so easy to use.( they also make a great gift for the person that does not yet have everything!!) these are available on our web site under grill accessories Do not keep lifiting the BBQ hood! Please lift the hood of your BBQ as little as possible whilst smoking this will to allow the smoke to disperse around the cooking area and do its job. Ready, Set.....
